There are 5 fruits in Sailor Piece, all obtained by rolling at the Coin Fruit Dealer or Gems Fruit Dealer on Sailor Island. Each roll costs 15,000 coins or 50 gems. The fruit you receive is random based on published dealer probabilities. Fruits are a separate combat category from swords and fighting styles.

How Fruit Dealers Work
Both dealers sit on Sailor Island. Travel there through a purple teleport portal on any island. The Coin Fruit Dealer charges 15,000 coins per roll. The Gems Fruit Dealer charges 50 gems. The fruit pool and odds are the same for both. There is no pity system for fruit rolls.
Fruits in Builds
Fruits function as a supplementary combat tool alongside your sword and fighting style. They provide additional damage abilities, area control, or mobility depending on the fruit. Later in the game, a fruit's value depends more on how it interacts with traits, artifacts, and stat rerolls than on its base rarity alone.
